Cod in white sauce with pre-soaked, cleaned, and frozen cod
Ingredients:
- soaked and cleaned cod
- 2 medium potatoes
- 3–4 cloves of garlic
- 150 ml olive oil (or to taste)
- Salt and freshly ground pepper
- Parsley (optional)
Preparation:
- Place the cod in a pot of cold water and cook for 20-30 minutes, until tender (cooking time depends on the thickness of the pieces). At the same time, cook the peeled and chopped potatoes in salted water in a separate pot.
- Drain the cooked cod and potatoes. Mash the cod with a fork or an immersion blender if you want a smooth texture. Do the same with the potatoes.
- In a large bowl or pot, combine the flaked cod and potatoes. Add the finely minced garlic, then slowly drizzle in the olive oil while mixing (you can use a stand mixer with a dough hook, a whisk, or a wooden spoon). The goal is to achieve a creamy, spreadable texture – something like a thick pâté.
- Add pepper and salt to taste (be careful with the salt). Stir in finely chopped fresh parsley if desired.
- Serve with toasted bread. It can be eaten hot or cold – as you prefer.
